Faced with a head of cabbage, some spicy vegetarian sausage, and brown rice for dinner, we did what any self-respecting person would do with that: We went out.

Over the course of the next week, to stave off the head of cabbage still sitting in the refrigerator, we made:

Ratatouille from the Vegetarian Times website (verdict: Good, but we were hungry again two hours later, despite eating it over brown rice)

Eggplant parm from the VT website (GOOD, and yes, R did eat the eggplant)

Fritatta (good, but took an hour to make)

Gnocchi from a Moosewood cookbook (Phase 1: Buy food processor, bake potatoes, make dough, refrigerate; Phase 2: Cook gnocchi. Phase 2 happens tonight. )

I should confess: Cabbage is great when you roast it with olive oil.... we just can't think of anything vegetarian that we could eat WITH it.

If you cut potatoes and carrots and onions in small pieces and saute them in your favorite saute-substance [I use butter, myself}, then add some vegetable stock and whatever spices you fancy, and cook it all, covered, till everything is tender, you can cut the cabbage into small wedges, set them on the top of the soup, and simmer till they're tender too. Very, very good. (Or if you're in a hurry, just chop the cabbage and cook it with the rest of the soup, but don't add it until about the last thirty minutes or so.)

Also very good -- cabbage croquettes. Chop the cabbage, and some onions, add an egg so that the little patties will hold together [and some rice if you have any on hand, although that's not obligatory], season to taste, and cook them first on one side, then on the other.

Either of these will serve as a main course, and then all you need is a salad and some bread and you're there.

I love cabbage.

(blink) I never would have thought of the "set cabbage wedges on top" trick. In fact, I don't think I would have considered croquettes either. Those both sound good-- thanks!

You're very welcome. The cabbage wedges on top of the soup turn out to be very pretty, by the way, which makes them nice for company and/or festive occasions. And with the croquettes, you can always add other leftover vegetables you have on hand, just by chopping or grating them into the mix. It takes a little experimenting to find out which combinations you like and which work best for you, but I think the results are worth the trouble.
