Faced with a head of cabbage, some spicy vegetarian sausage, and brown rice for dinner, we did what any self-respecting person would do with that: We went out.
Over the course of the next week, to stave off the head of cabbage still sitting in the refrigerator, we made:
Ratatouille from the Vegetarian Times website (verdict: Good, but we were hungry again two hours later, despite eating it over brown rice)
Eggplant parm from the VT website (GOOD, and yes, R did eat the eggplant)
Fritatta (good, but took an hour to make)
Gnocchi from a Moosewood cookbook (Phase 1: Buy food processor, bake potatoes, make dough, refrigerate; Phase 2: Cook gnocchi. Phase 2 happens tonight. )
I should confess: Cabbage is great when you roast it with olive oil.... we just can't think of anything vegetarian that we could eat WITH it.
